Ingredients:

120g plain flour
60g caster sugar
60g butter, softened
1 egg yolk
1 teaspoon baking powder
1/2 teaspoon vanilla extract
100g fresh raspberries, chopped into small pieces

Cooking Instructions:

Preheat oven to 180°C (350°F). Grease and line a baking tray with parchment paper.
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg yolk and vanilla extract until combined.
Sift in the flour and baking powder and mix until just combined.
Fold in the chopped raspberries until evenly distributed throughout the mixture.
Using your hands, roll the mixture into small balls and place on the prepared baking tray, leaving enough space between each cookie for them to spread during cooking.
Bake for 12–15 minutes or until golden brown on top. Allow to cool before serving or storing in an airtight container for up to 5 days.
