Ingredients:

1/2 cup cooked chicken, shredded or diced
1/4 cup red enchilada sauce
1/4 cup canned black beans, drained and rinsed
2 tablespoons diced onion
2 tablespoons diced bell pepper (any color)
2 tablespoons chopped fresh cilantro leaves
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
2 small (6
inch) flour tortillas
2 tablespoons shredded cheese of your choice (cheddar, Monterey Jack, etc.)

Cooking Instructions:

Preheat oven to 375°F. Grease a baking dish with cooking spray or oil.
In a medium bowl, combine chicken, enchilada sauce, black beans, onion, bell pepper, cilantro leaves, cumin and garlic powder. Mix until all ingredients are evenly distributed.
Place one tortilla in the baking dish and spread half of the chicken mixture over it. Sprinkle with half of the cheese. Place the second tortilla on top and spread the remaining chicken mixture over it. Sprinkle with remaining cheese.
Bake for 25 minutes or until cheese is melted and bubbly and edges of tortillas are golden brown. Serve hot with your favorite toppings such as sour cream or guacamole!
