Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
2 cups vegetable broth or stock
1 can (14 ounces) diced tomatoes with juice
1/2 cup uncooked quinoa, rinsed and drained
1/2 cup vegan fish
style pieces or strips
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the oregano and thyme and cook for another minute.
Pour in the vegetable broth or stock, diced tomatoes with juice, quinoa, vegan fish-style pieces or strips, salt and pepper. Bring to a boil then reduce heat to low and simmer for 15 minutes or until quinoa is cooked through.
Taste for seasoning and adjust if necessary. Serve hot with crusty bread or crackers if desired.
