Ingredients:

2 large eggs
2 tablespoons of grated cheese (cheddar or mozzarella)
1 teaspoon of fresh herbs (parsley or chives)
1/2 an avocado, sliced into thin slices
2 slices of cooked ham or bacon
1 bagel (plain or sesame seed)

Cooking Instructions:

Crack the eggs into a bowl and whisk until combined.
Heat a non-stick pan over medium heat and add the eggs. Cook for 3-4 minutes until the eggs are almost set.
Add the grated cheese and herbs to the pan and stir to combine. Cook for another minute until the cheese is melted and the eggs are cooked through.
Toast the bagel in a toaster or under a grill for 2-3 minutes until golden brown.
Place the scrambled egg mixture onto one half of the bagel and top with avocado slices and ham or bacon slices. Close the bagel to make a sandwich.
