Ingredients:

75g butter, softened
75g light brown sugar
1 egg, beaten
1 teaspoon vanilla extract
125g plain flour
½ teaspoon baking powder
¼ teaspoon bicarbonate of soda
½ teaspoon ground cinnamon
100g rolled oats

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Line a baking tray with parchment paper.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
In a separate bowl, sift together the flour, baking powder, bicarbonate of soda and cinnamon. Add to the creamed mixture and mix until just combined. Stir in the oats until evenly distributed throughout the dough.
Using your hands or a spoon, form small balls of dough (about 1 tablespoon each) and place on the prepared baking tray about 2 inches apart from each other. Flatten slightly with your fingers or a fork if desired.
Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely before serving.
