Ingredients:

2 tablespoons vegetable oil
1/2 cup shredded cabbage
1/4 cup shredded carrots
1/4 cup chopped scallions
2 tablespoons soy sauce
1 teaspoon sesame oil
2 tablespoons cornstarch mixed with 2 tablespoons water to make a slurry
4 egg roll wrappers

Cooking Instructions:

Heat the vegetable oil in a large skillet over medium heat.
Add the cabbage, carrots, and scallions and cook for 3-4 minutes until softened.
Add the soy sauce and sesame oil and stir to combine.
Add the cornstarch slurry and stir until thickened. Remove from heat and let cool slightly.
Place an egg roll wrapper on a clean work surface with one corner pointing towards you like a diamond shape. Place about 2 tablespoons of the filling in the center of the wrapper. Fold the bottom corner up over the filling and tuck it under the filling tightly. Fold in both sides of the wrapper towards the center then roll up tightly towards the remaining corner to seal it shut with some water or egg wash if needed to help it stick together better. Repeat with remaining wrappers and filling.
Heat enough vegetable oil in a large skillet over medium-high heat to cover half of an egg roll (about 1 inch deep). Once hot, carefully add two or three egg rolls at a time into the hot oil and fry for 3-4 minutes until golden brown on all sides, flipping them occasionally so they cook evenly on all sides. Remove from heat and let cool slightly before serving warm with your favorite dipping sauce if desired!
