Ingredients:

2 bell peppers (halved and seeded)
½ cup cooked quinoa
½ cup cooked black beans
¼ cup diced tomatoes
¼ cup diced red onion
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon chili powder
Salt and pepper to taste

Cooking Instructions:

Preheat your sous vide water bath to 185°F (85°C).
Place the bell pepper halves in a vacuum seal bag or zip-top bag.
In a bowl, mix together the quinoa, black beans, tomatoes, red onion, olive oil, garlic powder, chili powder and salt and pepper.
Stuff each bell pepper half with the quinoa mixture and seal the bag.
Place the bag in the preheated water bath and cook for 1 hour.
Remove from the water bath and serve warm with your favorite toppings!
