Ingredients:

2 tablespoons butter
1 onion, diced
2 cloves garlic, minced
500g carrots, peeled and diced
1 teaspoon dried thyme leaves
1 litre vegetable stock or chicken stock
250ml cream or coconut cream
Salt and pepper to taste

Cooking Instructions:

Heat the butter in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrots and thyme leaves and cook for another 5 minutes.
Pour in the stock and bring to a boil. Reduce heat to low and simmer for 15 minutes or until the carrots are tender.
Remove from heat and let cool slightly before blending with an immersion blender or transferring to a blender or food processor to blend until smooth.
Return the soup to the pot over low heat and stir in the cream or coconut cream until combined. Season with salt and pepper to taste before serving.
