Ingredients:

75g butter, softened
50g caster sugar
50g light brown sugar
1 egg, beaten
1 teaspoon vanilla extract
125g plain flour
½ teaspoon baking powder
¼ teaspoon salt
100g milk chocolate chips

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Line a baking tray with parchment paper.
In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the egg and vanilla extract until combined.
In a separate bowl, sift together the flour, baking powder and salt. Gradually add this to the wet ingredients and mix until combined. Stir in the chocolate chips until evenly distributed throughout the dough.
Using a tablespoon or ice cream scoop, scoop out balls of dough onto the prepared baking tray leaving enough space between each cookie for them to spread during baking. Bake in preheated oven for 8–10 minutes or until golden brown around the edges but still soft in the middle. Allow to cool on tray for 5 minutes before transferring to a wire rack to cool completely before serving.
