Ingredients:

1/2 cup dry pasta of your choice
1/2 cup diced eggplant
1/4 cup diced onion
2 cloves garlic, minced
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
Salt and pepper to taste
2 tablespoons tomato sauce or passata
2 tablespoons nutritional yeast flakes

Cooking Instructions:

Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.

Add the cooked pasta to the skillet and stir to combine everything together. Cook for an additional 5 minutes until everything is heated through. Serve immediately!
