Ingredients:
4 jumbo pasta shells
2 tablespoons olive oil
1/2 cup diced chicken breast
1/4 cup diced onion
1/2 cup broccoli florets, chopped into small pieces
2 cloves garlic, minced
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
Salt and pepper to taste
1/2 cup prepared Alfredo sauce
Cooking Instructions:
Preheat oven to 375°F. Bring a large pot of salted water to a boil over high heat. Add the jumbo shells and cook for 8-10 minutes until al dente. Drain the shells and set aside.
Heat the olive oil in a large skillet over medium heat. Add the chicken, onion, broccoli, garlic, oregano, basil, salt and pepper. Cook for 5-7 minutes until the chicken is cooked through and vegetables are tender. Remove from heat and set aside.
Grease an 8×8 inch baking dish with cooking spray or butter. Spoon about 2 tablespoons of Alfredo sauce into the bottom of the dish. Fill each shell with about 2 tablespoons of the chicken mixture then place them in the baking dish on top of the sauce. Pour remaining Alfredo sauce over top of shells then sprinkle with Parmesan cheese if desired. Bake for 15-20 minutes until cheese is melted and bubbly around edges of dish. Serve warm with extra Parmesan cheese if desired. Enjoy!
