Ingredients:

1 can (400 g) black beans, drained and rinsed
1 onion, diced
2 cloves garlic, minced
2 cups vegetable broth or water
1 teaspoon ground cumin
½ teaspoon smoked paprika
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the onion and garlic and cook for 3-4 minutes until softened.
Add the vegetable broth or water, black beans, cumin, smoked paprika, salt and pepper. Bring to a boil then reduce heat to low and simmer for 20 minutes.
Use an immersion blender or regular blender to blend the soup until smooth. Taste and adjust seasoning if needed. Serve hot with your favorite toppings such as avocado slices or cilantro leaves.
