Ingredients:

2 tablespoons of all
purpose flour
1 teaspoon of ground ginger
1/4 teaspoon of baking powder
2 tablespoons of butter or margarine
2 tablespoons of honey or maple syrup
1/4 cup of mixed nuts (almonds, walnuts, pecans)
1/2 cup of plain yogurt
1/2 cup of mixed fruit compote (strawberries, blueberries, raspberries)

Cooking Instructions:

Preheat the oven to 350°F.
In a medium bowl mix together the flour, ginger and baking powder.
Cut in the butter or margarine until it resembles coarse crumbs.
Stir in the honey or maple syrup until it forms a dough.
On a lightly floured surface roll out the dough to about ¼ inch thick and cut into desired shapes with cookie cutters. Place on an ungreased baking sheet and bake for 5 minutes or until golden brown. Allow to cool completely before serving.
In a small bowl mix together the nuts and yogurt until combined.
To serve layer the cooled gingerbread with the yogurt mixture and top with fruit compote.
