Ingredients:

2 tablespoons olive oil
2 medium potatoes (peeled and diced)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
4 ounces ham (diced)
1/2 cup shredded cheese (cheddar or mozzarella)
2 eggs

Cooking Instructions:

Preheat oven to 375°F.
Heat the olive oil in a large skillet over medium heat. Add the potatoes and cook for 5 minutes until lightly browned.
Add the garlic powder, onion powder, salt, and pepper to the potatoes and stir to combine. Cook for an additional 5 minutes until potatoes are tender.
Remove from heat and add the diced ham and shredded cheese to the skillet. Stir to combine.
Grease a baking dish with cooking spray or butter then spoon the potato mixture into it so that it forms a nest shape in the center of the dish. Make sure there is enough room for two eggs in the center of the nest.
Crack two eggs into the center of the nest then season with salt and pepper if desired.
Bake for 15-20 minutes until eggs are cooked through but still slightly runny in center when pierced with a fork or knife tip (cooking time will depend on size of eggs).
