Ingredients:

75g butter, softened
75g light brown sugar
1 egg, beaten
1 teaspoon vanilla extract
125g plain flour
½ teaspoon baking powder
¼ teaspoon bicarbonate of soda
¼ teaspoon salt
100g rolled oats
50g dried cranberries

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Line a baking tray with parchment paper.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
In a separate bowl, sift together the flour, baking powder, bicarbonate of soda and salt. Add to the creamed mixture and mix until just combined. Stir in the oats and cranberries until evenly distributed throughout the dough.
Drop spoonfuls of dough onto the prepared baking tray, leaving enough space between each cookie for them to spread during baking. Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
