Ingredients:

100g spaghetti noodles
1 chicken breast, diced into small cubes
2 tablespoons olive oil
1/2 onion, diced finely
2 cloves garlic, minced
200g mushrooms, sliced
1/4 cup white wine
1/4 cup chicken stock
2 tablespoons butter
2 tablespoons parsley, chopped finely

Cooking Instructions:

Bring a pot of salted water to a boil and add the spaghetti noodles. Cook for 8-10 minutes or until al dente. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the chicken cubes and cook for 5 minutes or until golden brown. Remove from the skillet and set aside.
Add the onion and garlic to the skillet and cook for 3 minutes or until softened. Add the mushrooms and cook for an additional 5 minutes or until softened.
Pour in the white wine and chicken stock and bring to a simmer for 3 minutes or until reduced by half. Stir in the butter until melted then add back in the cooked chicken cubes along with any accumulated juices from resting on a plate earlier on. Simmer for an additional 3 minutes or until sauce has thickened slightly then stir in parsley before removing from heat.
To serve, combine cooked spaghetti noodles with sauce mixture in a bowl then top with extra parsley if desired before serving immediately! Enjoy!
