Ingredients:

100g fettuccine pasta
1 tablespoon olive oil
2 cloves garlic, minced
100g mushrooms, sliced
50g cooked chicken breast, diced or shredded
2 tablespoons butter
2 tablespoons all
purpose flour
250ml milk
60g Parmesan cheese, grated
Salt and pepper to taste

Cooking Instructions:

Bring a pot of salted water to a boil over high heat. Add the fettuccine and cook according to package instructions. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the garlic and mushrooms and cook until softened, about 5 minutes. Add the chicken and cook for another 3 minutes until heated through. Remove from heat and set aside.
In the same skillet, melt the butter over medium heat. Whisk in the flour until combined and cook for 1 minute until lightly golden brown. Slowly whisk in the milk until combined and bring to a simmer. Cook for 3-4 minutes until thickened then stir in the Parmesan cheese until melted through. Season with salt and pepper to taste then add the cooked fettuccine noodles into the sauce along with the mushroom mixture from earlier. Stir everything together until combined then remove from heat. Serve immediately with extra Parmesan cheese if desired!
