Ingredients:

2 large flour tortillas
1 cup cooked chicken, shredded or diced
1/2 cup shredded cheese (cheddar or Monterey Jack)
1/4 cup diced onion
1/4 cup diced bell pepper (red or green)
2 tablespoons olive oil
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat.
Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.
Add the chicken to the skillet and season with salt and pepper to taste. Cook for an additional 5 minutes until the chicken is heated through.
Place one of the tortillas in the skillet and top with half of the cheese, followed by the chicken mixture. Top with remaining cheese and then place second tortilla on top.
Cook for 3-4 minutes until bottom tortilla is golden brown and cheese is melted. Flip quesadilla over using a spatula and cook for an additional 3-4 minutes until golden brown on both sides.
Remove from heat and cut into wedges before serving warm with your favorite toppings such as salsa or sour cream if desired.
