Ingredients:

80g soba noodles
1 tablespoon sesame oil
1 teaspoon soy sauce
1 teaspoon rice vinegar
½ teaspoon sugar
½ teaspoon grated ginger root
2 cloves garlic, minced
2 tablespoons vegetable broth or water
½ cup sliced mushrooms
½ cup sliced bell peppers
¼ cup shredded carrots

Cooking Instructions:

Bring a pot of water to a boil and add the soba noodles. Cook for 8-10 minutes until al dente. Drain and rinse with cold water. Set aside.
Heat the sesame oil in a large skillet over medium heat. Add the soy sauce, rice vinegar, sugar, ginger root, garlic and vegetable broth or water and stir to combine.
Add the mushrooms, bell peppers and carrots to the skillet and cook for 5-7 minutes until vegetables are tender.
Add the cooked soba noodles to the skillet and toss to combine with the vegetables. Cook for an additional 2-3 minutes until heated through. Serve immediately.
