Ingredients:

2 cups of vegetable broth
1 can of diced tomatoes (400g)
1/2 cup of white wine
1/4 cup of diced onion
2 cloves of garlic, minced
1 teaspoon of dried oregano
1 teaspoon of dried basil
Salt and pepper to taste

Cooking Instructions:

In a medium saucepan over medium heat, add the vegetable broth, diced tomatoes, white wine, onion, garlic, oregano and basil. Bring to a boil.
Reduce the heat to low and simmer for 20 minutes or until the vegetables are tender.
Using an immersion blender or food processor blend the soup until creamy. If desired add salt and pepper to taste.
Serve warm with crusty bread or croutons if desired. Enjoy!
