Ingredients:

2 medium potatoes, diced into small cubes
1/2 red bell pepper, diced into small cubes
1/2 onion, diced into small cubes
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
1 large egg

Cooking Instructions:

Preheat the oven to 375°F (190°C).
In a large bowl, combine the potatoes, bell pepper, onion, garlic, olive oil, oregano, salt and pepper. Mix until everything is evenly coated.
Transfer the mixture to an oven safe dish or baking sheet lined with parchment paper. Spread it out evenly in the dish or baking sheet.
Bake for 20 minutes until the vegetables are tender and lightly browned.
Create a nest in the center of the vegetables by pushing them aside with a spoon or spatula. Crack an egg into the center of the nest and season with salt and pepper if desired.
Bake for an additional 5 minutes until the egg is cooked to your desired doneness.
