Ingredients:

2 eggs
2 tablespoons of milk
1 tablespoon of butter or oil
1/4 cup of diced ham
1/4 cup of shredded cheese (cheddar or mozzarella)
1/4 cup of diced vegetables (onion, bell pepper, mushrooms)
1 teaspoon of fresh herbs (parsley or chives)
Salt and pepper to taste

Cooking Instructions:

In a medium bowl whisk together the eggs and milk until combined.
Heat a non-stick skillet over medium heat and add the butter or oil. Once the butter has melted add the ham and vegetables to the pan. Cook for 3-4 minutes until the vegetables are softened.
Pour in the egg mixture into the pan and cook for 2-3 minutes until it starts to set on the bottom. Sprinkle on the cheese and herbs over top then season with salt and pepper to taste.
Using a spatula fold one side of the omelette over onto itself then cook for an additional 2-3 minutes until it is cooked through. Serve immediately.
