Ingredients:

100g lasagna sheets
150g cooked chicken breast, diced
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
250g passata sauce or tomato puree
2 tablespoons fresh basil leaves, chopped
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
200g ricotta cheese
100g mozzarella cheese, grated

Cooking Instructions:

Preheat the oven to 180°C. Grease a baking dish with some olive oil.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened and fragrant.
Add the diced chicken and cook for 3-4 minutes until lightly browned.
Add the passata sauce or tomato puree to the skillet along with the basil leaves, oregano, salt and pepper. Simmer for 5 minutes until thickened slightly.
Spread a layer of the sauce mixture into the bottom of the prepared baking dish. Top with a layer of lasagna sheets followed by half of the ricotta cheese and half of the mozzarella cheese. Repeat with another layer of sauce mixture followed by lasagna sheets and remaining cheeses.
Bake in preheated oven for 40-45 minutes until golden brown on top and bubbling around edges. Let cool for 10 minutes before serving warm. Enjoy!
