Ingredients:

60g dried penne pasta
1 tablespoon olive oil
1 small chicken breast, diced into cubes
2 cloves garlic, minced
2 tablespoons sun
dried tomatoes, chopped
½ teaspoon dried oregano
¼ teaspoon red pepper flakes
¼ cup white wine
½ cup chicken broth
2 tablespoons freshly grated Parmesan cheese

Cooking Instructions:

Bring a pot of salted water to a boil over high heat. Add the penne pasta and cook according to package instructions. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the chicken cubes and cook until golden brown on all sides, about 5 minutes. Add the garlic, sun-dried tomatoes, oregano and red pepper flakes and cook for another minute until fragrant.
Pour in the white wine and chicken broth and bring to a simmer. Simmer for 5 minutes or until the sauce has reduced slightly.
Add the cooked pasta to the skillet and toss to combine with the sauce. Sprinkle with Parmesan cheese before serving.
