Ingredients:

120g cooked chicken breast, diced
1/2 cup broccoli florets
1/4 cup vegetable broth or water
2 cloves garlic, minced
1/4 teaspoon dried oregano
1/4 teaspoon dried basil leaves
1/4 teaspoon ground black pepper
2 tablespoons nutritional yeast flakes or Parmesan cheese (optional)
2 tablespoons cornstarch or arrowroot powder
1 cup unsweetened almond milk or other non
dairy milk of choice

Cooking Instructions:

In a medium saucepan over medium heat, add the vegetable broth or water. Add the garlic and cook for about 30 seconds until fragrant.
Add the broccoli florets and cook for about 5 minutes until tender.
Add the cooked chicken breast and stir to combine. Cook for another 3 minutes until heated through.
In a small bowl whisk together the almond milk with the cornstarch or arrowroot powder until combined. Pour into the saucepan with the vegetables and chicken and stir to combine. Bring to a simmer over medium heat and cook for about 5 minutes until thickened slightly.
Add the oregano, basil leaves, black pepper and nutritional yeast flakes or Parmesan cheese (if using). Stir to combine and cook for another minute until heated through. Serve immediately over your favorite pasta or grains of choice! Enjoy!
