Ingredients:

100g dry gluten
free pasta of your choice
1/2 cup vegan pesto sauce
1/2 cup cherry tomatoes, halved
1/2 cup zucchini, sliced into rounds
1/2 cup bell peppers, sliced into strips
2 cloves garlic, minced
2 tablespoons nutritional yeast
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the tomatoes, zucchini, bell peppers and garlic on the baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to combine. Roast for 15 minutes or until vegetables are tender and lightly browned.
Meanwhile, cook the pasta according to package instructions in a large pot of boiling salted water until al dente. Drain and set aside.
In a large bowl combine the cooked pasta with the roasted vegetables and pesto sauce. Add nutritional yeast and mix until everything is well combined. Taste for seasoning and adjust if necessary. Serve warm or cold as desired!
