Ingredients:

2 lasagna sheets
1/2 cup cooked chicken, diced
1/4 cup spinach leaves, chopped
1/4 cup ricotta cheese
1/4 cup mozzarella cheese, shredded
2 tablespoons Parmesan cheese, grated
2 tablespoons tomato sauce
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C). Grease a small baking dish with cooking spray.
Place one lasagna sheet in the bottom of the baking dish. Top with half of the chicken and spinach leaves. Sprinkle with salt and pepper to taste.
Spread ricotta cheese over the top of the chicken and spinach layer. Sprinkle with half of the mozzarella cheese and Parmesan cheese. Top with remaining lasagna sheet.
Spread tomato sauce over the top of the lasagna sheet. Sprinkle with remaining mozzarella cheese and Parmesan cheese.
Bake for 30-40 minutes or until golden brown on top and bubbly around edges. Let cool for 10 minutes before serving. Enjoy!
