Ingredients:

2 tablespoons olive oil
1 boneless skinless chicken breast, cut into cubes
1/2 cup broccoli florets
1/2 cup sliced mushrooms
1/4 cup diced onion
2 cloves garlic, minced
1/2 teaspoon dried oregano leaves
Salt and pepper to taste
1/4 cup Alfredo sauce (store bought or homemade)
2 tablespoons grated Parmesan cheese

Cooking Instructions:

Preheat oven to 375°F. Grease a baking dish with cooking spray.
Heat olive oil in a large skillet over medium heat. Add chicken cubes and cook until lightly browned on all sides, about 5 minutes.
Add broccoli florets, mushrooms, onion, garlic, oregano leaves, salt and pepper to the skillet and cook for an additional 5 minutes or until vegetables are tender.
Remove from heat and stir in Alfredo sauce until combined. Transfer mixture to the prepared baking dish. Sprinkle Parmesan cheese over the top of the mixture.
Bake for 15 minutes or until cheese is melted and bubbly. Serve hot with your favorite side dishes!
