Ingredients:

2 eggs
2 tablespoons of milk
1 tablespoon of olive oil
1/4 cup of diced ham
1/4 cup of shredded cheese (cheddar or mozzarella)
1/4 cup of diced bell peppers (red or green)
2 tablespoons of chopped fresh herbs (parsley or basil)
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 350°F. Grease a small baking dish with olive oil.
In a medium bowl whisk together the eggs and milk until combined. Season with salt and pepper to taste.
Add the ham, cheese, bell peppers and herbs to the egg mixture and stir until combined.
Pour the egg mixture into the greased baking dish and bake in preheated oven for 25 minutes or until golden brown on top.
