Ingredients:

1/2 cup Arborio rice
1/2 cup diced chicken breast
1/4 cup diced onion
1/4 cup diced carrots
1/4 cup diced celery
2 cloves garlic, minced
2 tablespoons olive oil
2 cups chicken broth
1/4 teaspoon dried thyme
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion, carrots, celery, garlic and thyme. Cook for 5 minutes until vegetables are softened.
Add the chicken and cook for an additional 3 minutes until chicken is cooked through.
Add the rice to the pan and stir to combine with the vegetables and chicken. Cook for 2 minutes until the rice is lightly toasted.
Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer for 15 minutes or until all of the liquid has been absorbed by the rice. Stir occasionally during cooking time to prevent sticking or burning on the bottom of the pan.
Once all of the liquid has been absorbed by the rice, remove from heat and season with salt and pepper to taste before serving.
