Ingredients:

200g pappardelle pasta
250g wild boar mince
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
2 tablespoons tomato paste
1/2 cup vegetable stock
Salt and pepper to taste

Cooking Instructions:

Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions. Drain and set aside.
In a large skillet over medium heat, add the wild boar mince and cook until browned. Add the onion and garlic and cook until softened.
Stir in the oregano, basil, tomato paste, vegetable stock, salt and pepper. Simmer for 15 minutes or until sauce has thickened slightly.
Add the cooked pappardelle to the skillet with the sauce and toss to combine. Serve hot with freshly grated Parmesan cheese if desired.
