Ingredients:

2 eggs
2 tablespoons of grated cheese
2 slices of ham (chopped)
1/4 cup of diced onion
1/4 cup of diced bell pepper
1/4 cup of diced mushrooms
1 tablespoon of olive oil

Cooking Instructions:

Heat the olive oil in a skillet over medium heat.
Add the onions and bell peppers to the skillet and cook for 3-4 minutes until they are softened.
Add the mushrooms to the skillet and cook for an additional 2 minutes.
Push the vegetables to one side of the skillet and crack the eggs into the other side. Cook for 3-4 minutes until they are cooked through.
Sprinkle the cheese over top of everything in the skillet and add the chopped ham. Cook for an additional 2 minutes until everything is heated through and cheese is melted.
Serve hot!
