Ingredients:

2 large eggs
2 tablespoons of milk or cream
1/4 cup of shredded cheese of your choice (cheddar or mozzarella work well)
1/4 cup of diced bell peppers (red or green)
1/4 cup of diced onion
1/4 cup of diced mushrooms (optional)
Salt and pepper to taste
2 large tortillas or wraps

Cooking Instructions:

In a medium bowl, whisk together the eggs and milk until combined.
Heat a nonstick skillet over medium heat. Add the egg mixture to the skillet and cook for 3 minutes while stirring occasionally.
Add the cheese, bell peppers, onion, mushrooms (if using), salt and pepper to the skillet and continue cooking for an additional 3 minutes while stirring occasionally.
Remove from heat and set aside.
Place one tortilla on a plate or cutting board. Spread half of the egg mixture onto the tortilla in an even layer. Top with the other tortilla and press down lightly to seal it shut.
Heat a nonstick skillet over medium heat and add the wrap to it. Cook for 2 minutes per side until golden brown and crispy on both sides.
