Ingredients:

120g all
purpose flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon baking soda
Pinch of salt
60g butter, softened
30g honey or maple syrup
1 egg yolk

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, ginger, cinnamon, nutmeg, baking soda and salt. Set aside.
In a large bowl, cream together the butter and honey or maple syrup until light and fluffy. Beat in the egg yolk until combined.
Gradually add the dry ingredients to the wet ingredients and mix until combined. The dough should be thick but still pliable.
Roll out the dough on a lightly floured surface to about ¼ inch thick (6mm). Cut out desired shapes with cookie cutters and place on prepared baking sheet about 1 inch apart (2cm). Bake for 8-10 minutes or until golden brown around the edges. Allow to cool completely before serving.
