Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
2 cups vegetable broth or stock
1 can (14.5 ounces) diced tomatoes with juice
½ cup cooked white beans (cannellini or navy beans)
½ cup cooked red kidney beans
½ cup cooked green lentils
¼ teaspoon dried oregano
¼ teaspoon dried basil
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrot and celery and cook for another 5 minutes.
Pour in the vegetable broth or stock and bring to a boil. Reduce heat to low and add the tomatoes with juice, white beans, red kidney beans, green lentils, oregano, basil, salt and pepper. Simmer for 10 minutes or until vegetables are tender.
Serve hot with crusty bread or crackers if desired.
