Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 large carrot, diced
2 stalks celery, diced
2 cups vegetable broth
1 cup cooked or canned kidney beans
½ cup cooked or canned chickpeas
½ cup cooked or canned lentils
2 tablespoons tomato paste
2 tablespoons apple cider vinegar
1 teaspoon dried dill weed
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrot and celery and cook for another 5 minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and add the kidney beans, chickpeas, lentils, tomato paste, apple cider vinegar, dill weed, salt and pepper. Simmer for 20 minutes until vegetables are tender.
Serve hot with a dollop of vegan sour cream if desired. Enjoy!
