Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
½ cup pearl barley
2 cups vegetable broth or stock
½ teaspoon dried oregano leaves
¼ teaspoon dried thyme leaves
¼ teaspoon ground black pepper
Salt to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrot and celery and cook for another 5 minutes.
Add the pearl barley and stir to combine. Cook for another 2 minutes.
Pour in the vegetable broth or stock and bring to a boil. Reduce heat to low and simmer for 25-30 minutes until the barley is tender.
Add the oregano, thyme, black pepper, and salt to taste. Simmer for another 5 minutes until all of the flavors have combined together nicely.
Serve hot with crusty bread or crackers on the side if desired!
