Ingredients:

50g dry pasta of your choice
1 boneless skinless chicken breast, cut into cubes
2 cloves garlic, minced
2 tablespoons all
purpose flour
1/2 cup vegetable broth or white wine (optional)
1/4 cup non
dairy milk (such as almond or oat milk)
2 tablespoons vegan butter or margarine
1/4 teaspoon dried thyme leaves
Salt and pepper to taste

Cooking Instructions:

Bring a pot of salted water to a boil over high heat. Add the pasta and cook according to package instructions. Drain and set aside.
In a large skillet over medium heat, add the chicken cubes and cook until golden brown on all sides. Remove from the skillet and set aside.
In the same skillet, add the garlic and cook for 1 minute until fragrant. Add the flour and stir to combine. Slowly add in the vegetable broth or white wine (if using), stirring constantly until thickened. Add in the non-dairy milk, vegan butter or margarine, thyme leaves, salt and pepper to taste. Stir until combined and simmer for 3 minutes until thickened.
Return the cooked chicken cubes to the skillet along with the cooked pasta and stir to combine everything together until heated through. Serve immediately with your favorite side dish!
