Ingredients:

1 cup cauliflower florets (grated)
2 tablespoons olive oil
1/2 onion (diced)
1 garlic clove (minced)
1/2 cup frozen peas and carrots mix
2 tablespoons soy sauce or tamari sauce (gluten
free)
Salt and pepper to taste

Cooking Instructions:

Start by grating the cauliflower florets using a food processor or a box grater. Set aside.
Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic and cook for about 3 minutes until softened.
Add the frozen peas and carrots mix to the skillet and cook for another 3 minutes until heated through.
Add the grated cauliflower to the skillet and stir everything together. Cook for about 5 minutes until the cauliflower is tender but still slightly crunchy.
Add the soy sauce or tamari sauce to the skillet and stir everything together again. Cook for another 2 minutes until everything is heated through and combined well.
Season with salt and pepper to taste before serving hot!
