Ingredients:

120g plain flour
1 teaspoon baking powder
2 tablespoons coconut oil, melted and cooled slightly
2 tablespoons honey or maple syrup (or sugar free alternative)
1 teaspoon vanilla extract
2 tablespoons almond milk (or other plant
based milk)
60g fresh raspberries, chopped into small pieces

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour and baking powder.
In a separate bowl, mix together the coconut oil, honey or maple syrup (or sugar free alternative), vanilla extract and almond milk until combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped raspberries.
Scoop tablespoon-sized balls of dough onto the prepared baking sheet and flatten slightly with your fingers or a fork. Bake for 12-15 minutes until golden brown on top. Allow to cool before serving.
