Ingredients:

60g peanut butter
1 ripe banana, mashed
60g light brown sugar
1 egg, beaten
120g plain flour
½ teaspoon baking powder
¼ teaspoon salt

Cooking Instructions:

Preheat oven to 180°C/350°F/Gas Mark
Line a baking tray with parchment paper.
In a medium bowl, mix together the peanut butter, mashed banana and light brown sugar until well combined.
Add the beaten egg and mix until fully incorporated.
In a separate bowl, sift together the plain flour, baking powder and salt.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix!
Using a spoon or cookie scoop, drop spoonfuls of cookie dough onto the prepared baking tray leaving enough space between each cookie for them to spread out during baking.
Bake in preheated oven for 12-15 minutes or until golden brown around the edges and set in the middle. Allow to cool on baking tray for 5 minutes before transferring to a wire rack to cool completely before serving.
