Ingredients:

2 large tortillas
2 tablespoons of olive oil
1/2 cup of cooked chicken, shredded or diced
1/2 avocado, sliced or diced
1/4 cup of red onion, diced
1/4 cup of cilantro leaves, chopped
1/4 cup of shredded cheese (cheddar or Monterey Jack)
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a skillet over medium heat. Add the chicken and cook until lightly browned. Season with salt and pepper to taste. Remove from heat and set aside.
Place the tortillas on a flat surface. Divide the chicken evenly between the two tortillas. Top with avocado slices, red onion, cilantro leaves, and cheese. Season with salt and pepper to taste.
Fold one side of each tortilla over the filling then fold in the sides to form a wrap shape. Secure with toothpicks if needed.
Heat a non-stick skillet over medium heat for about 2 minutes until hot but not smoking. Place each wrap in the skillet seam side down and cook for about 2 minutes until golden brown on one side then flip over to cook for another 2 minutes until golden brown on both sides. Serve warm or cold as desired!
