Ingredients:

1 whole wheat tortilla wrap
2 tablespoons of olive oil
½ cup of diced bell peppers (red, yellow or green)
½ cup of diced onion
¼ cup of diced mushrooms
¼ cup of grated cheese (cheddar or mozzarella)

Cooking Instructions:

Heat the olive oil in a skillet over medium heat.
Add the bell peppers, onion and mushrooms to the skillet and cook for 3-4 minutes until they are softened.
Place the tortilla wrap on a plate and spread the cooked vegetables over it evenly.
Sprinkle the grated cheese over the vegetables.
Fold the tortilla wrap in half to form a quesadilla shape and press down lightly with a spatula to seal it shut.
Place the quesadilla in the skillet and cook for 4-5 minutes until it is golden brown on both sides.
Remove from heat and serve warm with your favorite salsa or guacamole on top!
