Ingredients:

1 cup celery, chopped
1/2 cup onion, chopped
1/2 cup carrots, chopped
2 cloves garlic, minced
2 cups vegetable broth
1/4 teaspoon black pepper
1/4 teaspoon dried thyme leaves
1/2 cup unsweetened almond milk or other non
dairy milk of choice

Cooking Instructions:

In a medium saucepan over medium heat, add the celery, onion, carrots and garlic. Cook for 5 minutes until vegetables are softened.
Add the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes until vegetables are tender.
Add the black pepper and thyme leaves and stir to combine. Simmer for an additional 5 minutes.
Remove from heat and let cool slightly before transferring to a blender or food processor. Blend until smooth and creamy.
Return soup to the saucepan over low heat and stir in the almond milk or other non-dairy milk of choice until combined and heated through (about 3-5 minutes).
Serve warm with your favorite toppings such as croutons or fresh herbs! Enjoy!
