Ingredients:

2 slices of sourdough bread
2 tablespoons of pesto sauce
1 cooked chicken breast, sliced into strips
1/4 cup of mozzarella cheese, shredded
2 tablespoons of olive oil

Cooking Instructions:

Preheat a panini press or a large skillet over medium heat.
Spread the pesto sauce on one side of each slice of bread.
Place the chicken strips on top of one slice of bread and top with the mozzarella cheese.
Place the other slice of bread on top and brush both sides with olive oil.
Place the sandwich onto the preheated panini press or skillet and cook for 5-7 minutes until golden brown and cheese is melted.
Cut in half and serve warm.
