Ingredients:

1 can (400 g) of diced tomatoes
1 cup vegetable broth or water
1/2 cup chopped fresh basil leaves
1/2 teaspoon garlic powder
Salt and pepper to taste

Cooking Instructions:

In a medium saucepan over medium heat, add the diced tomatoes, vegetable broth or water, chopped basil leaves, garlic powder, salt and pepper. Stir to combine.
Bring the mixture to a boil then reduce the heat to low and simmer for 15-20 minutes until the soup has thickened slightly.
Remove from heat and blend with an immersion blender until smooth. Serve warm with extra fresh basil leaves if desired.
