Ingredients:

2 large eggs
1/4 cup shredded cheese of your choice (cheddar or mozzarella work well)
2 slices of cooked ham, diced into small pieces
2 small flour tortillas
1 tablespoon butter or oil for cooking

Cooking Instructions:

Heat a large skillet over medium heat. Add the butter or oil to the pan.
Crack the eggs into a bowl and whisk until combined. Pour the eggs into the skillet and cook until scrambled.
Add the diced ham to the skillet and cook for an additional minute or two until heated through.
Place one of the tortillas on a plate and top with half of the egg mixture and half of the cheese. Top with the second tortilla and press down lightly to help it stick together.
Carefully flip the quesadilla over in the skillet so that it cooks on both sides until golden brown and crispy on each side (about 3-4 minutes per side).
Remove from heat and cut into wedges before serving warm. Enjoy!
