Ingredients:

2 tablespoons of peanut butter
2 tablespoons of honey
1 cup of all
purpose flour
1 teaspoon of baking powder
½ teaspoon of baking soda
¼ teaspoon of salt
1 cup of almond milk
2 tablespoons of vegetable oil
1 cup of fresh fruit (e.g. strawberries or blueberries)
¼ cup of granola
¼ cup of mixed berries (e.g. raspberries or blackberries)

Cooking Instructions:

In a medium bowl mix together the peanut butter and honey until well combined. Set aside.
In a separate bowl mix together the flour, baking powder, baking soda and salt until well combined.
Add the almond milk to the dry ingredients and mix until just combined. Do not overmix!
Heat a nonstick skillet over medium heat and add the vegetable oil to the pan.
Pour ¼ cup of batter into the skillet for each pancake and cook for about 2 minutes on each side or until golden brown on both sides.
Serve pancakes with peanut butter honey mixture on top along with fresh fruit, granola and mixed berries as desired! Enjoy!
