Ingredients:

1/2 cup cooked chicken, diced
1/4 cup frozen mixed vegetables (peas, carrots, corn)
2 tablespoons butter
2 tablespoons all
purpose flour
1/2 cup chicken broth or stock
1/4 teaspoon dried thyme leaves
Salt and pepper to taste
1 sheet of pre
made puff pastry dough (thawed)

Cooking Instructions:

Preheat oven to 375°F. Grease a single-serving baking dish with butter or cooking spray.
In a medium saucepan over medium heat, melt the butter and add the flour. Stir until combined and cook for about 2 minutes until lightly golden brown.
Slowly add the chicken broth or stock while stirring constantly until the mixture thickens and comes to a boil. Reduce heat to low and add the thyme leaves, salt and pepper to taste. Simmer for about 5 minutes until thickened.
Add the cooked chicken and frozen vegetables to the saucepan and stir until combined. Pour into prepared baking dish and spread evenly with a spoon or spatula.
Cut out a circle of puff pastry dough that is slightly larger than the top of your baking dish and place it on top of the filling in the dish. Crimp edges together with your fingers or a fork if desired for decoration. Cut several small slits in top of pastry dough for steam to escape during baking process.
Bake in preheated oven for 20-25 minutes until pastry is golden brown and filling is bubbly hot throughout when tested with a knife inserted into center of pot pie filling through one of the slits in top crust layer of pastry dough . Let cool for 5 minutes before serving warm .
