Ingredients:

150g uncooked shrimp, peeled and deveined
1/2 cup long grain white rice
1/4 cup diced onion
1/4 cup diced bell pepper
2 cloves garlic, minced
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
2 tablespoons olive oil
1/2 cup chicken broth or stock
Salt and pepper to taste

Cooking Instructions:

Preheat your sous vide water bath to 140°F (60°C).
Place the shrimp in a vacuum sealed bag with the olive oil and seasonings. Seal the bag using the water displacement method.
Place the bag in the preheated water bath and cook for 30 minutes.
Meanwhile, heat a skillet over medium heat and add the onion, bell pepper, garlic, paprika and cayenne pepper (if using). Cook until vegetables are softened, about 5 minutes.
Add the rice to the skillet and stir to combine with the vegetables. Cook for an additional 3 minutes.
Add the chicken broth or stock to the skillet and bring to a boil. Reduce heat to low and simmer for 15 minutes or until all liquid is absorbed by the rice.
Remove from heat and fluff with a fork before serving alongside cooked shrimp from sous vide bag. 8
